Rillettes | Homemade French Speciality
Rillettes are a wonderfully satisfying appetiser served on fresh bread with cornichons. Rillettes are most commonly made from pork but other meats, and sometimes fish can be used also. The meat is salted and slowly cooked in fat until the meat is 'melt in your mouth' soft. Stored in a ceramic pot, it is left to cool before serving.
